What we’ve been eating

I don’t typically share recipes since they can be found very easily over the internets but I will be providing a couple of links and if you see something you like and want to know more about please ask!

I discovered this recipe here and since I’m always on the hunt to find delicious yet easy bread I gave it a go. This recipe is originally from a book called My Bread: The Revolutionary No-Work, No-Knead Method by Jim Lahey. It requires a lot of waiting time but hardly any working time and it’s so easy. I have the book coming to me from the library and I can’t wait to try more recipes!

Later on we made grilled cheese sandwiches with the bread and ate them alongside a soup concoction I made. It’s got a chicken stock base with quinoa, chile peppers, onions, and arugula. It was pretty tasty.

More bread but this time for breakfast and with a side of cranberries. Cranberries for breakfast? Mmm indeed!

Some fresh green salad.

A complete beet salad. Beet greens cooked with garlic and then covered in roasted beets, red wine vinegar, and salt and pepper. Delicious and really good for you!
